Method
- 2 cups 00 flour
- 2 whole eggs
- 2 egg yolks
- 1 tsp salt
- 1 Tbsp extra-virgin olive oil
Method
- On a flat surface make a mound with the flour creating a well in the middle.
- Add 2 whole eggs and 2 egg yolks to the well and add the salt and olive oil.
- Using a fork, mix the ingredients.
- Once combined, scrape into a ball. Using your hands, kneed the dough ball for 8-10 minutes.
- If the dough remains flaky and won't hold together, add a tiny bit of egg yolk. If too tacky roll the dough in a small amount of flour and continue to kneed.
- Once the ball is smooth and elastic, wrap it in cling film and rest at room temperature for 30 minutes.
