- 1/4 Cucumber
- 1/2 Red Onion
- 1/2 Chilli
- 6 Radishes
- 2 Tbsp Rice Wine Vinegar
- 2 tsp Castor Sugar
- Sesame Oil
- Parsley
- Salt & Pepper
- Cayenne Pepper
Method
- De-seed the cucumber (scrape out the middle section with a teaspoon) and cut into half moons along with the radishes. Thinly slice the red onion and combine all vegetables in a sieve.
- Sprinkle the vegetables with sea salt (about 2 tsp) and leave for approx 20 minutes. The salt will draw the moisture out the veg and leave them nice and crunchy.
- Transfer the veg to a large mixing bowl, add the finely chopped chilli, rice wine vinegar, castor sugar and sesame oil and mix well. Sprinkle over a handful of chopped parsley and a dash of cayenne pepper.
- Season with salt and pepper to taste and serve.
