Pork Sauce Marinade(combine in a bowl)

Satay Sauce (blend all ingredients together)
- 80ml Soya Sauce
- 80ml Oyster Sauce
- 3 Tbsp Hoisin Sauce
- 2 Tbsp Rice Wine Vinegar
- 2 Tbsp Honey
- 2 Tbsp Brown Sugar
- 1 tsp Chinese 5 Spice
- 1/2 tsp Fish Sauce
- 3 Minces Garlic Cloves
Noodle Ingredients
- 1 Red Pepper
- 3 Spring Onions
- Handful of Mushrooms
- Dried Noodles
- Chicken Stock (cube or jelly pot)
- 2 Garlic Cloves
- 1 Red Chilli
- Broccoli
- Kale
- 1 Tbsp Sesame Oil
Meat
- Pork Belly Slices
- Chinese 5 Spice
Satay Sauce (blend all ingredients together)
- 1 tsp Curry Powder
- 1 tsp Ground Cumin
- 1/2 Tbsp Turmeric
- 1 or 2 fresh Chilli's - to taste
- Thumb-size piece of ginger
- 2 Garlic Cloves
- Bunch of Coriander
- 5/6 Tbsp Peanut Butter (crunchy or smooth)
- 3 Tbsp Soya Sauce
- 1 tsp Fish Sauce
- 3 Limes - grate rind of 1 / juice of all 3
- Remove pork from the fridge 20 minutes before cooking, pat dry with kitchen roll to ensure completely dry and place in an oven proof dish.
- Set oven to 200deg c and sprinkle pork generously with Chinese 5 spice.
- Grab a bowl and combine all pork marinade ingredients mentioned above and whisk.
- Blend satay sauce ingredients mentioned above. Add a little water to loosen if necessary.
- Cook the pork for 30 minutes, drain any fat from the dish and cover with the sticky pork marinade. Return to the oven for a further 30 minutes, once cooked cover with tin foil and leave to rest.
- Place noodles in a pan with boiling water and 1/2 chicken stock jelly / cube. Bring to the boil and reduce to a simmer for approx 4 minutes.
- Grab a wok and place on a high heat. Chop the vegetables into bite-size chunks and add to the wok with sesame oil.
- Once the vegetables are part-cooked, add the satay sauce and loosen with a few tablespoons of water.
- Add the noodles, chop the pork and serve!
