- 1 Tbsp olive oil
- 3 Tbsp butter
- 1/2 onion, finely chopped
- 1 carrot, finely chopped
- 200 g minced pork
- 200 g minced lamb
- 200 g minced beef
- 250 ml whole milk
- 250 ml red wine
- 2 tins of chopped tomatoes
- Salt and pepper
Method
- In a large, heavy bottomed pan, heat the oil over a medium heat and add the meat (pork, lamb and beef). Brown, then remove from the pan and place aside.
- Add the butter and onion to the pan and cook until the onion turns soft and translucent.
- Add the carrot and cook for a further 2 minutes.
- Add the milk and browned meat to the pan and simmer for 2 few minutes, then add wine and simmer for a further 10 minutes.
- Add the chopped tomatoes and season with salt and pepper.
- Turn the heat down to a low simmer and leave to cook for 3 hours.
- Serve with your pasta of choice with a generous grating of parmesan cheese.
