- 3 Eggs
- 1/2 Red Pepper
- Handful of Kale
- Black Olives
- Chorizo
- Salt & Pepper

Method
- Pre-heat the oven to 220 deg c and butter an oven proof dish
- Roughly chop the chorizo, red pepper, kale and black olives and mix together
- Use the vegetables as barriers in the oven proof dish and create three sections.
- Crack the eggs into the sections and season with salt and pepper.
- Bake in the oven until eggs are cooked but still dippy!
- Serve with toast, ciabatta or sourdough - great for dipping!
