- 1 tbsp sesame oil
- 1/2 onion, finely chopped
- 2 tsp ginger, grated
- 3 large garlic cloves, minced
- 1 Red chilli, de-seeded and finely chopped
- 500g pork mince
- 5 Tbsp soft brown sugar
- 1 Tbsp runny honey
- 2 Tbsp fish sauce
- 1 Tbsp Soy sauce
Method
- Heat oil in a large wok over high heat.
- Add the onion, ginger, garlic and chilli and cook for 2-3 minutes.
- Add the pork mince and cook for 5 minutes, breaking up the meat with a wooden spoon.
- Add the sugar, honey, soy sauce and fish sauce. Stir, then leave it to cook (without touching) until the juices cook out and the pork starts to caramelise. Then stir it and leave it again, without stirring, for around 30 seconds to get more caramelisation. Repeat twice more until caramelised.
- I served this with green beans, rice and a cucumber pickle but you could also have this with a noodle of choice. Sprinkle with sesame seeds, green chilli and if you fancy - spring onion.
