- 300g Tomatoes
- 1 Large Garlic Clove
- Handful of Basil
- 2 Tbsp Balsamic Vinegar
- 6 Tbsp Olive Oil
- Salt & Pepper
- Ciabatta
- Fennel Seeds
- Parmesan Cheese (Or vegan equivalent)
Method
- Chop tomatoes into small chunks, mince the garlic and finely chop the basil.
- Grab a bowl and combine the tomatoes, garlic, basil, balsamic vinegar and olive oil. Add salt and pepper to taste.
- Chop the ciabatta, sprinkle with olive oil, salt, pepper and fennel seeds. Toast under the grill for 3-4 minutes or until golden.
- Now add a large spoonful of brushetta mix to the toasted ciabatta and finally grate Parmesan cheese over the top!
