Top Tip - You should really use cooking chorizo for this recipe but you could also use cooked if you can't find any. An alternative for the shallot would be 1/2 white onion. Feel free to add more garlic (more the better!)
- 3 Tbsp Olive Oil
- 400g Chorizo
- 1/2 Shallot
- 6 Garlic Cloves
- 300ml Red Wine
- Sea Salt
Method
- Peel and finely slice the garlic cloves and dice the shallot. Chop the chorizo into bite size chunks.
- Heat olive oil in a frying pan, add chorizo and cook long enough to crisp up then remove leaving the flavoured oil.
- Add the shallot and garlic, cook in the chorizo oil until softened. Add the chorizo back into the pan with the red wine. Bring the wine to the boil then return to a simmer until the sauce reduces and thickens.
- Add a sprinkle of salt to taste and serve with crusty bread.
