- 3 eggs
- 50 ml milk
- 4 thick slices of brioche bread
- Knob of butter
- Bacon and maple syrup to serve
Method
- In a large bowl, whisk the eggs and milk.
- Place a large frying pan on a medium heat and add a knob of butter.
- Dip the thickly sliced brioche into the egg/milk mixture ensuring to coat both sides. You want the bread to soak up the mixture but not too soggy that the bread breaks.
- Place the brioche slices in the frying pan and cook either side until the inside is tender and the outside is lightly toasted.
- I prefer the salty / sweet combo for my eggy brioche so I pair this with crispy smoked bacon and a generous drizzle of maple syrup.
